Cheesy Baked Potato Boats

Sometimes comfort food is all about keeping it simple. These cheesy baked potato boats are warm, filling, and perfect for dinner or even as a party snack.

Ingredients

4 large potatoes

2 tbsp butter

½ cup sour cream (or plain yogurt)

1 cup shredded cheddar cheese

4 strips of cooked bacon, crumbled

2 tbsp chopped green onions

Salt and pepper to taste

Instructions

Bake the potatoes: Preheat your oven to 200°C (400°F). Scrub potatoes clean, prick them with a fork, and bake for 45–50 minutes until tender.

Scoop & mix: Cut each potato in half and scoop out the insides into a bowl, leaving the skins intact. Mash the potato with butter, sour cream, half the cheese, salt, and pepper.

Fill the boats: Spoon the mixture back into the potato skins. Top with remaining cheese.

Bake again: Place in the oven for another 10 minutes until the cheese is melted and bubbly.

Garnish & serve: Sprinkle with bacon and green onions before serving.
